Black Bean Salsa Chicken and Vegetables – Midweek meals for weight loss!

We all know that during the week, it is easy to run out of time to cook a healthy dinner. So here’s a dinner that really packs a punch as far as taste goes – that black bean and corn salsa is flavorful!

Recipe Name:
Black Bean Salsa Chicken and Vegetables
Ingredients:
8 ounces of chicken tenderloins
1 lime – for lime juice
14 tablespoons Chipotle Black Bean & Corn Salsa,Salad mix (4 cups)
6 Mini Sweet Peppers
1.5 cups of green beans
1/2 cup of carrots
Add spices to taste.
Serves 2 people
Calories Per Serving: 242
Carbs = 34g Fat = 1g Protein = 32g
Cook chicken tenderloins on high in nonstick pan for one minute on each side. Then reduce heat to medium, pour in salsa, and cook covered for 7-9 minutes or until done.
Place vegetables in 1 1/2 cups of boiling water and cook for 5 minutes (or steam in bag via package instructions). Season to taste.
Cook mini sweet peppers for 3-4 minutes on medium/high, flipping once, covered if you desire a softer texture pepper.
Plate salad, and use lime juice/pepper as seasoning.
